Brendan and Carly Coyle, the couple behind Dendric Estate, are bringing a fresh perspective to the cider scene with an emphasis on sustainability. They both have a background in fine beverages; Brendan was the former Master Distiller at High West Distillery, where Carly also worked when they moved to Park City in 2009. They have combined their passion for quality drinks and the mountain lifestyle into their work at Dendric Estate.

Their first sparkling dry cider, crafted using the traditional Charmat Method, is made with apples harvested from the fall 2024 crop, resulting in a flavor profile with a balance of tannins and acidity. Available in 750ml and 375ml bottles, the corked and caged cider launches first in Utah, with plans to expand regionally and offer online sales soon.

“For our inaugural release, we're aiming for a blend that is bright and crisp, with elevated acidity, subtle minerality, and a dry finish carried by fine natural bubbles,” said Brendan. “Conducting these blending trials on a small scale allows us to hone the precise profile we want to achieve for our debut cider.”

A Sustainable Approach to Brewing Cider

Located on a scenic 20-acre estate in Kamas Valley, Dendric Estate is as much about preserving the land as it is about crafting exceptional ciders. Their orchard, spanning three acres, boasts 3,240 apple trees and includes 33 unique apple varieties designed for cider-making.

The name "Dendric" is a nod to the estate’s water source, which flows through a dendritic system from Weber Canyon. Water conservation and sustainable farming practices are priorities at every step—from the orchard to the bottle.

They’ve also invested in cutting-edge facilities. A state-of-the-art production house, completed just in time for the 2024 apple harvest, has enabled them to press nearly 100,000 pounds of apples with care and precision. Every bottle they produce represents craftsmanship and respect for the environment.

What’s Next for Dendric Estate?

Cider lovers can look forward to visiting the estate later this year, where Dendric Estate plans to open an on-site tasting room. This picturesque space will offer curated cider pairings, small-plate menus, and a venue for special events, weddings, and private gatherings. Patrons will also be able to purchase bottles and Dendric Estate merch at that time.
