"I grew up eating Bolognese, though I don’t know if my mom knew it was actually what she was making for our family. I have fond memories of coming home from football practice as a kid eating multiple bowls before falling asleep with the sauce still stuck to my face," said Eric Hill, Culinary Director at Hill Top Hospitality. "We wanted to incorporate a 'Mountain American' twist on the dish by adding elk and bison to our recipe, making it a true comfort food that is enjoyed in the dining room at Hearth and Hill and travels well to be eaten later or picked up to go."

"The meatloaf has been on the menu since the day we opened (2/04/03).  It's our vision of a western-style meatloaf and has been our most popular dish over the 20+ years we have been in business," said Travis Axtell, owner. "Visitors from around the world come back just to have our meatloaf.  Its still my favorite dish and I eat it weekly and is as good as it has ever been!"
