Inspired during a visit to a Kentucky distillery, David noticed parallels between his biochemistry work and the distilling process. In 2004, the Perkins family moved to Park City, Utah, drawn by its Old West history and unique whiskey heritage.
Starting modestly with a 250-gallon still and saloon in a historic downtown Park City location, High West rapidly earned international acclaim for its innovative whiskey and diverse offerings. Notably, it became Utah's first legal distillery since 1870. In 2009, it expanded its influence by opening the High West Saloon, a favorite spot for food and whiskey lovers.

Offset Bier
Back to Top of ListOffset Bier combines tradition with creativity, offering a range of traditional European/German-style beers. From various IPAs to inventive lagers, Offset Bier is a testament to the rich heritage and future of craft brewing. In addition, owner Conor Brown understands the importance of promoting responsible consumption, which is reflected in his business practices and community involvement. Offset Bier promotes mental and physical health as much as they can, and the weekly Run Club is an excellent example of that.
“It took a while to come up with a brand that had a bit more meaning, I wanted to create something that had multiple layers,” said Conor, founder/owner/brewer. “How we present the brand, with our packaging etc., it is a little different; we purposefully cut off the logo, we place things in weird places. I didn’t want the logo to be the most important thing on the packaging. I think it makes people want to explore a little bit.”
Tours & Tastings: Guests are always welcome to ask to take a look at operations in the back. No official tastings are offered.
