This meal is a collection of simple dishes typical of a home-cooked winter meal in the French countryside, specifically the Provence and Languedoc regions. Beef Daube is similar to Beef Bourguignon; however, since it is made in the south, rather than Burgundy, the wine used in the stew is made from the robust Rhone varietals. Mediterranean flavors of oranges and olives are often present as well. We will serve it over a celery root potato mash, a lighter and more flavorful dish similar to mashed potatoes. For dessert, a chocolate cake made with rye flour, a delicious combination served with creme angles flavored with warm spices.
