Growing up in So. California provided the opportunity to enjoy all kinds of Mexican food, from visiting taco stands, small restaurants, and food trucks to camping on the beach in Mexico and buying seafood from local fishermen. My favorite part of culinary school was learning the dishes that Octavio, a Mexican chef from Puebla, taught. In this class, I share some of my favorite dishes. Although dishes reflect a blending of cultures, they would not exist without the techniques and ingredients from south of the border.
