These are modern sauces, as their deep robust flavors are created using ingredients that can easily be prepared in a home kitchen or easily purchased and do not utilize heavy thickeners. You will learn a variety of techniques in making these sauces that you can later apply to your own creations.
Caramelized Onion Coulis - goes with just about anything
Butternut Squash and Cider Vinegar Sauce - for pasta, gnocchi , chicken and pork
Green Peppercorn Sauce - great sauce for steak
Red Wine and Fig Sauce - delicious with game meats and duck
Apricot and Sauvignon Blanc - for fish, shellfish and chicken
We will add a salad and vegetables to accompany tastes of the various dishes and the sauces to make a light meal.
