When I was growing up, my parents loved having guests for dinner. They loved to explore new cuisines and enjoyed time trying out new recipes. They often chose either some sort of international cuisine or American regional fare. One of my favorites was when they made jambalaya, which I later learned was from the bayou country in Louisiana and today served in restaurants in New Orleans. It is with a nod to my family’s tradition that I have chosen this class menu.
Appetizer: Angels on Horseback - Grilled Oysters with Bacon and Remoulade
Salad: Seasonal Greens with Dried Figs, Blue Cheese, Toasted Walnuts and Sherry Vinaigrette with Rice Calas
Entree: Shrimp, Tasso Ham and Andouille Sausage Jambalaya
