During the winter holidays, my parents often had guests for dinner. The menus they served were always something not typical of traditional holiday fare, at least in the United States. They would choose either some sort of international cuisine or American regional fare. One of my favorites was when they made jambalaya, which I later learned was from the bayou country in Louisiana and today served in restaurants in New Orleans. It is with a nod to my family’s tradition that I have chosen this menu for a class the weekend before Christmas.
Appetizer: Angels on Horseback - Grilled Oysters with Bacon and Remoulade
Salad: Seasonal Greens with Dried Figs, Blue Cheese, Toasted Walnuts and Sherry Vinaigrette with Rice Calas
Entree: Shrimp, Tasso Ham and Andouille Sausage Jambalaya
Dessert: Lemon Tarts
