Overview

Fermentation is a specific pickling method. Instead of vinegar, lactic acid is used to preserve food. During fermentation, the starches and sugars in the food are converted into lactic acid by the bacteria lactobacilli. The lactic acid production gives fermented foods their unique sour smell and flavor. Fermented pickles are thought to provide a variety of health benefits. Sample a few varieties of fermented pickles, make and take home a jar to start your own fermentation.
