I am always excited when spring fruits and vegetables begin to arrive in the market. Here in Park City, they trickle in slowly, so early spring cooking is a mixture of early spring produce with the still readily-available winter produce. In tonight’s class you will cook early spring peas, asparagus, radishes and early lettuces with lingering winter produce such as citrus, fennel and winter greens.
