Overview

Alpine dishes are the perfect comfort food for an après ski meal. These dishes featured in this class are all primarily Austrian. They are easy and fun to make. In addition to the goulash, we’ll make handmade spaetzle dumpling and cabbage. Make this at home - a great make ahead dish with flavors the next day, perfect to heat up after a day on the mountain.

Menu:
Appetizer: Cheese Dumpling Soup with Pickled Vegetables - this soup is hearty bone broth soup with alpine spices and a splash of port. In class you will make the cheese dumplings made with Emmental cheese to serve in the soup

Entree: Austrian Goulash with Spaetzle - There are many types of goulash. Austrian goulash is thick, more like a stew. Beef is coated with a dark thick sauce thicken by the breaking down of long cooked onions and collagen from the beef. We will serve this over handmade spaetzle - tiny pasta like dumplings.

Sides: Sweet and Sour Cabbage - This a very simple traditional red cabbage dish. The sweetness and acidity in this cabbage is a perfect along side the rich stew.

Dessert: Kaiserschmarrn - A very rustic crepe dish with many variations. Crepes are more or less shredded and topped with jams, fruits, cream, nuts, etc. Very craveable!
